There is a utility in the office resource kit that will let you create a customized transform file for the office MSI package. Using this tool, you can create an unattended install. Modify the setup.ini file (if the tool does not do it for you) to launch the setup.exe with the transform file. Tell users (either via email or by sneakernet) to run the install from the network share.
