Put the CNAME (common name?) entry in the HOSTS file.  Outlook for the Mac
is only going to look for the server name not the IP address, and as far as
I can tell, it won't look for the FQDN either.  The Mac Hosts file matches
the server name to the FQDN, and then the FQDN to the IP address.  To my
understanding, when Outlook asks for the ServerName, the Mac OS converts the
ServerName to the FQDN and then converts the FQDN to the IP address.  Seems
a bit round-about, but it works for connecting to my Exchange 5.5 Server.

I sent a reference to this list a while back on how to set up Mac HOSTS
files, I'll see if I can dig it up and send it again.
