Then I think you will need to change it on the default recipient policy.
Proceed with caution!!! This has the potential to change the address on several system level objects such as the public information store and I'm sure there are others. I've seen situations where the default recipient policy was changed and public folder replication was broken for several hours. Mail sent to public folders bounced. Eventually, it sorted itself out as the RUS updated the addresses and it had a chance to replicate the changes out to all of the GCs, but it wasn't pretty getting there. Not to presume that you would ever take a suggestion from some guy in a discussion list and implement it directly on a production server. I don't think you can customize it so that the postmaster domain changes depending on the domain of the intended recipient.
