Then I think you will need to change it on the default recipient policy.

Proceed with caution!!! This has the potential to change the address on
several system level objects such as the public information store and
I'm sure there are others. I've seen situations where the default
recipient policy was changed and public folder replication was broken
for several hours. Mail sent to public folders bounced. Eventually, it
sorted itself out as the RUS updated the addresses and it had a chance
to replicate the changes out to all of the GCs, but it wasn't pretty
getting there.

Not to presume that you would ever take a suggestion from some guy in a
discussion list and implement it directly on a production server. You
would, of course, first implement the change in a test environment to
verify that it works as expected and to gauge the potential impact.

I just want to change it once, I don't want it to be dynamic. For
instance, I want it to be from Domain2.com instead of domain1.com all
the time.

I'm pretty sure that the return address that it uses when it builds an
NDR is the Primary SMTP address in the default recipient policy. I don't
think you can customize it so that the postmaster domain changes
depending on the domain of the intended recipient.

A possible workaround may be to all undeliverable mail for a given
domain to be forwarded to a different server for delivery. Have this
second server (or virtual server) generate the NDR.

I'm not sure what Drew is referring to about the profile, but the
postmaster address has our default AD domain name as the address. I
need to change that to something else. We have a company who doesn't
want anyone to know they are part of our org so we need it to say
something else in the NDR that gets bounced back to internet users so
they will not know. I have tried the masquerade domain option, but
that doesn't work. Is this possible?

No. root@, postmaster@, hostmaster@, abuse@, etc. are just "strongly
suggested" iirc.
