I use backup exec 8.5 with a similar setup except that I have two servers (one is for voice mails and fax storage).   The issue is not just the back up. It is the restore process ArcServe does not restore well when RPC is involved with exchange server talking to each . I would use WindowsNT backup/restore before I would use CA.

the general concensus on arcserve is don't bother, look elsewhere, etc.  Backup Exec or UltraBac.
