Hopefully your exchange server has "deleted item retention time" set to a number greater than zero.
Lots of folks set it to 30, which means you can recover deleted mail for 30 days without using a backup tape! If you have it, all the user needs to do (in outlook 2k) is go to the deleted items folder and then click TOOLS / Recover deleted items (BTW, this is a good way to avoid doing Individual Mailbox Backups -- known as Brick Level Backups) Good luck.
