Man maybe I just missed it in all the other responses, but in response to:

This is why I keep a nice big Deleted Items Retention time.  If it's been gone for 
30-60 days... chances are they're not gonna be looking for it any more.  If they fat 
finger a delete... you just go back in and recover it for them via the Recover Deleted 
Items option.  This has worked for us like a charm and saved me alot of headache, 
tape, time, and disk/storespace (BLB restores would kill Single Instance Storage).
