Why not Raid-5 for exchange?

In the discussion on server sizing for Exchange 2000 it was mentioned by several that I should be looking at getting away from using RAID5 for my OS, the application as well as the log files. Mirroring was mentioned quite often as how it should be configured. How are people doing this? In the past, we have tried using mirroring that comes with NT and have had pretty poor results. Is there some sort of hardware mirroring similar to the hardware RAID that I am using now? I do not see us reconfiguring our existing 5.5 servers to accomplish this but I do want to make sure that I have our 2000 optimally deployed.
