I had the same dilemma a few months ago when I moved to a new Exchange server.  Don't sweat keeping the same server name, use the "Ed Crowley Method" that William's link points to.  I can certainly testify that it is indeed "a beautiful thing". 
Your POP users may experience momentary discomfort (changing server names, but no big deal really) but MAPI clients (like Outlook) do indeed automagically find their mailboxes on the new server, plus you can take your time moving the boxes over.  That in itself is a luxury we get to enjoy all too seldom. 
I put my new server online, made sure I had it fully patched and configured, moved my mailbox first- strictly for testing connectivity of course ;-) then after a few days started moving user mailboxes in mass quantities over night.
