Reason to use Exchange 2000... Anyways, with DumpsterAlwaysOn registry setting you can retrieve individual files from any folder, but I don't think you can attach to a deleted mailbox.
I think you're stuck building a recovery server, exmerging the mailbox to PST, then back into your production server in a new mailbox (recall from memory, check doc's for exact steps). This is unless you've been doing Brick-Level Backups (NOT RECOMMENDED). You can bring up a recovery server on a regular PC, unless this person's mailbox is GigaBytes in size.
