Well, just thoughts... Did the users have mailboxes on the previous server name?
There are specific steps involving removing the first server from the network and AD, which sounds like you did not do. Can I assume that proper time has been allotted for AD replication and RUS updates for these new mailenabled users? Are there lots of events in the application event log of this server and the GC server(s)? (It might be more hassle than it is worth to try to troubleshoot resulting issues with the actions you've taken.
