Just realize that if you create it on the same server you'll have double the store size until you delete the original one! Actually I think it actually triples until you have done a successful B/U! Correct me if I'm wrong, just make sure you have the disk space.

On the same machine. Not required though. If you have another Exchange 2003 server in the same site you can create the store there as well.
