You can't invite Public Folders to a meeting, so nothing will show in message tracking. The only way that will work is to switch the view of the folder to category, then add the column "Created". This will show you when the relevant appointment was created.
If you are using Exchange 2007, the better option would be to switch to a room mailbox. That will not allow conflicts if configured correctly.
