I can switch my on-the-LAN workstation back and forth from HTTPS to TCP/IP without trouble just by changing the settings in the Outlook profile. We're running Exchange 2003 and the client on my desktop is Outlook 2010 (64-bit). It sounds like something else is going on in your setup.
