You aren't running SP1. 

If you were then the version information would be similar to this:

AdminDisplayVersion : Version 14.1 (Build 218.15)
ExchangeVersion     : 0.1 (8.0.535.0)

The version number of 14.0.639.21 is listed on the web page that you included. 
The other version information I believe is for legacy support.

This isn't listed here on Microsoft :  http://support.microsoft.com/kb/158530 
and I can't find it anywhere else.

We should be running Exchange 2010 Enterprise but want to know if we're running 
SP1 or not.
