Hello Katie, You can do the Helsiki run. Take the overnight train from Moscow to Helsinki- sleep over one night - embassy the next day [ if you arrive bright and early all doc's and visa will be completed by noon ] you can take the afternoon train back the same day to Moscow.
As a Canadian living in Moscow since 2003, I have made this run several times. The only requirement for doing your visa outside your home country is that the country you select must be one that you are permitted to stay in for a period of up to six months without a visa.
