I haven't had your category problems, but it sounds like it might be a caching issue.

Its all a bit bizzare really. I managed to add a keyword at the level
above and then the sub-categories appeared. So I added a new
subcategory and they disappeared again. I tried a few things and I
can't see a discernible pattern.
Also, when I look in the category quick builder there are a bunch of
old categories listed that don't exist any more and new categories are
missing.
Baffled.... Any help asap would be appreciated as we need to
reorganise our keyword/categories before next week when we get a new
starter.
