Personally I use String since it takes up less space in the Solr DB, but its 
minimal and I'm just being picky for no real reason.  Keep in mind that when 
using "String", it's value is case sensitive.  If you're concerned about that, 
though, just go with Text.

Are you saying that it doesn't index the contents of the document?

I remember you saying it was a PDF, so here are a couple of questions:
Is it a password-protected PDF?
Is there actually text in the PDF for it to scan (not text in an image, but 
actual vector-based text)?
If there is text, what language is the text in?

Another thing to try is running Solr from the prompt and watching what happens 
when you index that file.  Do you see an error from Solr in the command window? 
 If that's not an option for you (running Solr from terminal or a command 
promt), then you can try checking the Solr logs (no, I don't know which ones to 
check.  It's been a very long time since I've had to do that... maybe a year :)
