after a few decades of writing code, sometimes in 'c', I can generally
read it.

better understanding of how the systems work.

No, you're supposed to use the tools available to find information
that may lead you to an understanding. Demanding answers with no
apparent effort to find them yourself comes across as lazy and
inconsiderate. Simply searching 'ffmpeg "sost"' turns up multiple hits
that indicate that subtitles are involved;
Why would I search for 'ffmpeg "sost"'
