If all you're talking about is extracting three specific staves (vocal and
the two piano staves), from within Scroll view (and only from within Scroll
view) you can click the Staff Tool, click the handle that appears on each of
the three staves in question (the top handle if you see two), then select
Special Part Extraction from the Edit menu. A dialog box will appear that
usually you can just summarily OK (asks you to OK the multimeasure rest
symbol, etc.). 

If you are working with a score that previously was optimized, after
clicking OK you will see a warning that this action will cause Optimization
to be lost, which is fine since that particular optimization no longer is
applicable anyway. 

Next go to Page view and you'll see only the three staves that were
extracted. You can re-optimize if you wish or need to. You then can fix the
layout issues however you wish, same as if they'd been the only staves in
the first place. Obviously this file needs to be saved to a unique name. If
from Scroll view you wish to delete the staves not being used, you can do
that.
