Two points (and I'll be contacting CODA about the first) - I've had *no*

Are you registered on Coda's website? What are your communication preferences? Also, your email software and/or ISP may be blocking email sent from Coda, thinking that it is spam.
The UK distributors appear to be
doing absolutely nothing to promote the new version, whereas in the USA, you
guys (and dolls) get a T-shirt, reduced prices for pre-ordering, and now
free shipping (to compensate for the further delay).
Of course, that's not reserved for US customers, it's for everyone. Like you said, you should just order directly from Coda (especially upgrades).
Secondly, how *do* you go about installing Finale into Classic? Must I boot
into OS9 and then continue as normal, or boot into OSX, start up Classic,
and then install?
As others have said, by far the simplest and most frustration-free solution is to boot into OS 9 when you want to use Finale. It is possible, sometimes, to use Finale's MIDI capabilities from the Classic environment. But this can be buggy, tricky to set up and may or may not work depending on the brand of MIDI interface you have. (The M-Audio ones are best.) If you want to try, let me know and I'll give you some tips. But if you don't mind sticking with OS 9 for a few more months (for Finale use, at least), that's the most reliable way to go.
