Depending on which version of Finale you are using, you can set beam edits to copy along with the notes and preserve your manual beam edits. This will not work at all if you are copying partial measures, though.

Another way to do it (though I wouldn't do it this way) is to set the time signature to be 1 dotted half instead of 3/4, and use the Display As to make it show as 3/4 anyway. Then the eighths will all beam to the bar instead of to the beat. This will also make slash notation show up as one slash per bar, too, but if you aren't using slash notation then this won't bother you.
