Once I removed the `.xinitrc' file x11 would start again. Do I put the command in the `.profile' file? If so what is the command to start `enlightenment' as my wm?

You have to do a few special things for Apple's X11--in particular you have to read in the Fink environment. Check out:
http://fink.sourceforge.net/doc/x11/run-xfree86.php?phpLang=en#xinitrc
The examples shown will all run under Apple's X11, so you should be able to use one as a template.
