I'm no expert but gnucash 1.8.11-1 is in the unstable tree and the
bonobo-shlibs in stable. Which do you have enabled?
Try installing bonobo-shlibs (fink install bonobo-shlibs) and then
gnucash. I'm on OS X10.3.9 and have gnucash installed fine with the
dependent bonobo-shlibs also so it does work.
