From the OpenOffice.org website [1] you can get OpenOffice.org as a Mac application bundle (for either PPC or Intel) which you simply drag into your Applications folder. You can choose the X11 version, which is stable, or the native Mac (Aqua) version, which is in testing, and we would appreciate your feedback on it. :)
I used OpenOffice.org 2.1 (X11) successfully on my Intel Macbook, and will be doing l10n testing for OpenOffice.org 2.3 (X11 and Aqua) shortly.
Note: OpenOffice.org is available in a wide variety of languages [2], including (from 2.1) Vietnamese [3]. ;)
