This is not a problem with gnuplot.  You're nowhere near installing
gnuplot yet.  What the _ultimate_ package is that you're trying to
install is almost never important to a failure in an intervening dependency.

This problem has been discussed on our lists quite a few times.  It's
due to Apple deciding to remove some files from the X11 SDK.  There are
a couple of possible options on how to get around it:

Or, if you don't need X11 support, gnuplot-nox doesn't have issue in its
build chain.
