As I understand it (and I will accept correction if I'm wrong) the issue is that ghostscript 6 is used for TeX, because there were problems with PDF files generated by ghostscript 7 on OSX (this may since have been corrected). Because a number of people installed ghostscript 6 for TeX purposes from a non-fink installer, a system-ghostscript package was created for this purpose. Basically the system-ghostscript package just looks for a manual installation of ghostscript 6.
You may have to do a manual build of gv in order for it to see your GS.
