I am running the latest version of OS 10.3 (panther).
I just installed the most recent version of fink.
I used dselect to install ethereal. It sucessfully installed a bunch of depancies and then ethereal.
I do the following:
1) Start up Apples X11 software. (the executable that comes with the OS)
2) sudo ethereal

People have been installing the later version that's available from source.
