How exactly are you starting GNOME? The recommended .xinitrc file setup for GNOME>2.4 and apple's X11 is discussed in:

Also, you may need to set an environment variable to get gnome to work (a new bug in Tiger) as per: http://fink.sourceforge.net/faq/ usage-packages.php?phpLang=en#tiger-gtk
