Just for the record: What I did was simpler:

sudo dpkg -r --force-depends control-center
fink update control-center

No need to remove the packages that depend on control-center.

And yes, this is, of course, a bug in the gnome-settings-daemon-dev 
package. It should have a "Replaces: control-center" field.
