Hi,
I would suggest you to block all the traffic and
let out some well-known ports like www(80), ssl (443), ftp (20, 21) etc. Then
you would have your own network usage policy. Another thing is to see your load
on icoming//outgoing traffic by time. You can consult with your ISP they should
have some tool for you to monitor the load on your line to ISP. Otherwise you
can setup your own like MRTG. It is a free software. You should monitore your
router that connect you to your ISP.
Another thing you should consider is to use an IDS
system to sniff your network and identify who is using what type of traffic and
may be you can do web traffic blocking according to data you've
got..
