I have to laugh because my husband wanted the Fjords for farm work, I wanted them for dressage. MY justification was--well look at that woman on the Fjord on the front page of the regional dressage magazine. It was Anne on Wez of course. I do have a Fjord who is very uphill and collected and has a wonderful extended trot--Ingmar. Check out his amazing canter on my picture gallery. (http://www.eoni.com/~mishamez). But I am not sure he would have had the mind to go so far. He tends to drift in attention--ha. On the other hand, I will probably never know because I am just dreaming of first level. I'm with the guys who say breed true to type and let the individual horse see what it can do.
As far as sunfishing--I had a QH that could do that kind of buck, It means that the hind quarters are twisted high up and to one side so you can see its belly. You can't stay on it unless you can ride upside down. It's a high buck, and very scarey.
