Steven, The purpose of the large capacitor is not so much to reduce ripple but to reduce voltage sag under current peaks. It really has nothing to do with filtering.
If the power supply is being operated too close to its maximum output rating, then instantaneous current peaks (during voice peaks for example) may cause the supply to go into the current-limiting mode. This results in a momentary drop in output voltage. A large capacitor can supply the extra current necessary during peaks to keep the voltage from dropping. A larger power supply will also cure this problem, but many are trying to use power supplies (either linear or switching, it does not matter) in the 25-30 Amp range to run 100W rigs.
