Edit preferences.xml, change fullscreen to true (game-mode too maybe?).
If I remember correctly, the 3dfx drivers do not allow windowed mode
with acceleration. I have found drivers for my banshee which allow
windowed mode, but they were released by a 3rd party - you may want to
look into that.
