A warm welcome to the LAND OF FME!
To start with FME workbench, you can visit the movies section to get acquainted with the application. That's the most coolest way to get introduced to FME.

About your requirement of parsing the autocad text string to Shape file attribute.
All you have to do is to first let FME Workbench create the skeleton mapping file for you.
Then expose the autocad_text_string attribute on one feature type on the left hand side of the mapping file and then APPLY TO ALL autocad feature types (which could be layers/ geometry types depending on how you chose to read the autocad file).
Then in the destination SHAPE file feature create the required attribute and set the value to a constant which is autocad_text_string.
You can also do this using the ATTRIBUTECREATOR.
Hope that helps.
Happy FME-ing:-)
Let me know how this goes and I will help u out in case u have trouble.
Cheers
SRG
