The problem I'm come across is that you may only want the field to display at 200 pixels in order to match up with other fields on your layout, to make it aesthetic to the eye. However, you may have line items in the drop down that extend 200 pixels. Other development tools allow you to independently declare the drop down width from the field width, so the drop down could be wider than the field. Maybe someday FileMaker will take that approach. Why not go to layout, click on the field and extend it to the width to show all text.
