Ro-Tel’s Ranchero Tacos
 
5 min. prep 20 min. cook 4-6 servings
 
1 lb. lean ground beef or ground turkey
1 package (1 oz.) taco seasoning mix
2 cans (10 oz.) Ro-Tel Diced Tomatoes in Sauce, divided
1/3 cup water
12 prepared taco shells, warmed
3 cups shredded lettuce
1 ½ cups (6 oz.) shredded cheddar cheese
 
Cook meat in a large skillet over medium-high heat until crumbled and no longer 
pink; drain.  Add seasoning mix, 1 can tomatoes, and water.  Bring to a boil; 
reduce heat and cook, uncovered, 8 minutes, stirring occasionally.  
 
Fill each taco shell with equal amounts of meat mixture, shredded lettuce, and 
cheese..
 
Garnish with remaining 1 can of tomatoes.
