You will want to backup your $FWDIR/conf directory. I would also suggest you create a database version of your config, export it using "dbver export" command, and import the obtained file on the new box with "dbver inport".
Just a note, you cannot run SmartCenter on Windows 2000 Pro, you would have to install it on Windows 2000 Server. Check Point only supports the Smart Clients on Windows 2000 Pro.
