Our Nokia IP380 appears to be working fine, and doing what it's supposed
to. But periodically, and there seems no pattern, it just seems to
suddenly grind to a halt, or a least a massively slow crawl.

There is nothing suspicious in the CP logs (and we log everything), and
nothing in the Nokia logs, but rebooting the Nokia brings it all back to
life.

Before I spend ages trying to diagnose this, has anyone seen similar
symptoms, and if so, what was your solution?

Any advice would be greatly appreciated!
