You need to use OfficeMode and Hide-NAT the OfficeMode network object. Then go to your firewall object Props --> Remote Access, and enable the "Allow SecureClient to route all traffic through this Gateway." The client will have to enable the Hub Mode Configuration in the Site Profile Properties on the client side. Then you can just treat the OfficeMode network object as an internal object, and create a rule to allow destinations and services.
I am always able to turn off the Hub Mode Config from the client side. I'm not sure, but perhaps the SecureClient Packaging Tool may have an option to remove the ability to disable Hub Mode?
