Install the new hard drive as a slave drive in any Unix based machine. Copy the bootmanager image you want to said machine, along with a copy of a suitable track0 image (which contains the partition table).
Use dd to write the track 0 and the bootmanager to the raw device (ie /dev/hdb, NOT /dev/hdb1). I use a USB caddy for this job usually which makes the device /dev/sdb or similar. Move new disk to IP380 and voila. The secret is to find an IP350/380 with a disk in it of the same geometry from which you can lift a copy of the track0 using dd. Good luck, have fun, should take no more than 20 minutes once you have a suitable track0. Feel free to email me for an image if you're struggling.
