Which version of fwknop are you running?

On a Lenny server using the backport I do have:

$ LC_ALL=C dpkg -l postfix fwknop-server
||/ Name                       Version
+++-==========================-==================
ii  fwknop-server              1.9.11-1~bpo50+1
ii  postfix                    2.5.5-1.1

And I have a similar setup at home with Sid.

Looking at the dependencies (Line 14):
http://git.debian.org/?p=collab-maint/fwknop.git;a=blob;f=debian/control;h=1e1b9e1b906bd3e31cd9da222b9aec1c25b4611e;hb=HEAD

we have *exim4 | mail-transport-agent*

So, it means if no mail-transport-agent is installed, then by default, 
exim4 will be installed, otherwise it can be one of the followings:

http://packages.debian.org/fr/sid/mail-transport-agent

So, you should be able to install fwknop-server without exim4.
