You can set up your browser to ask for each cookie (and just hit escape 
if you don't know the site or don't want the cookies). iCab allows you to 
add, edit, etc. sites that you *never* want to accept cookies from (like 
doubleclick, etc.), and also allows you to go back and change this easily.

Having said that (plus the fact that you can turn off all cookies), there 
are some times you will want/need to allow cookies - for example, most 
online stores need them to process your purchases, Apple sets cookies for 
some of the iTools and for Knowledge Base (i.e., searches of the Tech 
Info site), and there are other places too.

It's a lot like other 'safe surfing' principles - do you know who's 
wanting to set that cookie, and how much info do you want them to track 
on you? It's a good idea to check the site's privacy policy, and if they 
have approval (if that's the right word) of Trustee or the online Better 
Business Bureau (BBB).
