7500, 8500, 7600, 8600 and 7300 use a jumper on the power LED connector to specify which machine it actually is. While I don't know the details of which pins correspond with which ID, is it possible your 8500's LED got switched with 7600's LED? Or your power LED is missing or not connected?
As for your installer troubles, it doesn't matter 7600 vs. 8500 to the installer as both are supported by both 8.1 and 9.1, but it sounds like the actual mach(ine) ID isn't set correctly and that is probably your problem. Find and DL the control panel "machidwannabe" or "machid wannabe" (google'll getya), and use it to set your mach id to 069 (8500/8600). This little bit of fakery works only with the control panel loaded, so booting from a CD for the install won't work (unless of course the cp is on the CD.) This cp works on all Macs running < osX of course, including G3 and G4 PowerBooks!
