I'm sitting here congratulating myself on finding the proper cables to get
the sound into the computer. But now I am stumped. I have itunes, I have
toast titanium 5.2; I have quicktime pro (5); but none of them have an
apparent method of converting this analog signal into digital files. I see
the "convert to MP3" option in itunes, but that doesn't get me there either.

Toast comes with a separate application, Spin Doctor, that allows you to capture and clean up the audio. Since you already have Toast Titanium, check around in your applications folder to see if you have it installed.
