My favorite setup is to just use my iPod for listening and leave my PowerBook for other things.
Headphones.com has a great selection of all types of headphones ranging from studio to home/office to portable solutions. Lots of recommendations and a function on the web site to compare specs on each headphone. Or for the ultimate portable solution, pair the iPod with a set of Altec Lansing inMotion Portable iPod Speakers. It has fairly good sound for a portable setup. It's easier to lug around the iPod than having to keep my laptop open.
