When a mail message bounces due to the reciever being offline, most mail systems try to send it again in four hours, then in another four hours, then once a day for (typically) five days.

So if your mail system goes offline for nearly two days like that, it may take a day or so for all your mail to come in. Also, your mail system is going to have to cope with a large backlog of mail.
