Please correct me if I am wrong, but according to a response here, OS X itself
has features that are seriously sped up by Altivec, which is the feature that
distinguishes the G4.  

Many video programs use it, certainly iMovie, maybe Final Cut 3.  iDVD  requires
the G4.  Certain filters in Photoshop can use Altivec to makae them work much
faster...some versions of the program require a downloadable plug-in to enable
the use of Altivec...possibly PS 7 does not.

There used to be a list of Altivec sensitive programs on the Apple site.  For
the specific programs you mention, you may need to check with the developers.

Generally, G4 accelerators are not much more expensive than G3 so it's not a big
deal anymore.   Some G4 zifs, like my OWC 466mhz (under $200), require an
Altivec enabler to work in OS 9.x, though some say reinstalling the os can
detect and enable it.
