This is the basic strategy:
start Disk Copy
create a disk image just large enough to hold the first session files
copy the files to the image
unmount the image
select Burn Image from the Disk Copy file menu (or, <cmd><b>)
navigate to and select image file
click the Burn button
in the options dialog*, select Allow Additional Burns
insert blank disk and burnFor subsequent sessions, insert previously burned, multisession disk. Presumably, for the final session, you would uncheck Allow Additional Burns.
*Click the "expand dialog" arrow if the options don't appear.
I don't know about windows XP (my celeron 333 loves '98 too much...), but I've had a wee problem with burning discs in OS X (10.1.5, mind you, I don't know if 10.2 fixed it). Using a G4 Quicksilver, Disc Burner (gasp) won't burn multi-session discs. A bit annoying - it inspired me to boot to OS 9 and drag out my toast install disk.
