Does all Radeon 7000 PCI cards work in a G3 or is it just the "Mac Edition" ones that are OK? If both types work, are there any advantages in paying extra for the more expensive mac edition?

I am not sure what you meant by all Radeon 7000 PCI cards, but I assume that you are referring to the PC versions that are available on the net or on Pricewatch.com that are priced substantially less than the "Mac Edition".
If that is the case, only Mac Edition Radeon 7000 will work with your G3. However, some of the PC versions' Radeon 7000 made by PowerColor or Sapphire can be made to work with your G3 by flashing with the mac rom using a PC. There are instructions on the net that tells you how, but the minimum requirement should be a PC Radeon 7000 with 32Mb DDR ram (not SDR). Most 64Mb DDR with TVO will work out except maybe some Excalibur cards.
What I am trying to say is that, if you flash your own card to make it work with your G3, the savings is substantial compared to the Mac Edition. Radeon 7000 flashed is almost equal to Radeon 7000 Mac Edition performance wise, except some are missing the DVI and the S-Video out connectors the Mac Edition has -- some of the ones auctioned on eBay! Note that I said almost equal and that is because, PC cards vary in quality and chip performance. If you want to make it mac, you may have to flash the rom to underclock the PC Radeon to make it work with your mac properly.
On the hand, the performance gain obtained from the new 7000 card is noticeable, especially if you are a gamer. If you're running OS X, run PCI Extreme to activate Quartz Extreme on the G3 and OS X feels a lot snappier than a stock Rage 128.
By the way, I have a flashed Radeon 7000 with TV-Out (second video) in my G4 as well as a flashed GeForce 2MX AGP as my main video.
