My gut feel is that it would be better to try for a blue and white G3 or
newer, but since the money goes to charity (not sure how much yet), I
may just go for it anyway.

The biggest limits of the G3 is the lack of an AGP slot for a fast graphics card. Your stuck using one of the three 33-Mhz PCI slots. I believe even the non-AGP B&W's have a 66-Mhz PCI slot for graphics.

If you do go for the G3, any good PCI card used to upgrade it, could
be transferred to a B&W when you upgrade.  The only thing I would
worry about transferring is RAM and the CPU card.
